About UsLin Wan "Sammy" Cheung was the Head Chef of Restaurant Zauberberg in Hotel Europe Davos starting from 1987. In 2004, his youngest son Che Hun entered the Restaurant Zauberberg, to learn the secrets of Chinese cuisine. He assisted the kitchen from the Hong Lok Yuen Club in Hong Kong preparing and producing for various banquets. He obtained his Chinese cuisine master-chef degree certificate in 2011. Before Sammy’s retirement in 2012, he passed his position on to Che Hun.
Che Yue Cheung entered in the hospitality service by the age of 16 in Morosani Posthotel Davos. He was very capable to adapt and learn from various well-known tutors like Loris Vanicelli, who for example introduced him to the world of wines. Che Yue’s interest in wines was awoken and he continuously strives to match the perfect wine for the dishes. After gaining experience from miscellaneous hotels and restaurants, which included Sunstar Park Hotel Davos, Hotel Schatzalp in Davos and running his first Chinese restaurant Marco Polo in Pfäffikon Zurich, he returned to Restaurant Zauberberg to assist and learn from his mother Yim Ling "Lisa" Cheung. After Che Hun had twelve years of experience in the kitchen and Che Yue had twenty-six years in the hospitality service, it was time to start a restaurant of their own with help of their eldest brother Che Fu as deputy general manager. Cheung Ltd. was founded by the three brothers on 23rd July 2015. Its objectives are running restaurants, catering, retailing, trading and providing restaurant consulting services. Restaurant Emerald was established as its first project and being the first family-run Chinese establishment in Davos. |
